Broccoli Pineapple Mango Salad.

Since I couldn't fine a broccoli salad with pineapple and mango, I just created one. I received as a wonderful gift this year a half a pineapple and a 2 mangoes plus some beautiful Filipino homemade bread buns. The buns went the first night with dinner. Today while figuring out supper I realize I had a lot of fresh broccoli I needed to use up . So I decided to combine the broccoli the pineapple and the last mango to make the salad. Here's how I did it:

 

I blanched the broccoli, about 7 big spears, very quickly in boiling water, just to take off the raw edge.

I cut up the broccoli into bite size pieces.

I cut up the half of pineapple into nice triangle pieces and tossed them with the broccoli.

Then I cut up the mango into cubes and tossed them in as well.

I then added 1/2 cup of raw sunflower seeds.

Plus 1/3 cup of diced onion.

Added a good pinch of sea salt.

In a separate bowl I mixed

1 1/2 table spoon of sugar

3 table spoons of white wine vinegar

and 1 cup of mayonnaise.

This I poured over the broccoli mixture and tossed again.

 

Ohh! Does it takes good!
